Hot Cocoa Mix
2 cups nonfat dry milk, 3/4 cup sugar, 1/2 c. cocoa, 1/2 cup powdered creamer, dash salt.
Combine all ingredients and blend well. Store in tightly covered container. Makes 3 3/4
cups mix. (about 15 - 6 oz. servings) For single servings mix 1/4 cup mix with 3/4 cup hot
water. |
Grandma's
7-layer cookies
1 cube margarine-melted, 1 cup graham cracker crumbs, 1 cup coconut, sm. pkg. choc. chips,
sm. pkg. butterscotch chips, 1 1/2 cups nuts, 1 can Borden's condensed milk. Layer in
order. Bake for 30 minutes at 350 degrees.

Awesome Rice Krispie Treats
1 cup sugar, 1 cup light Karo syrup, 1 cup creamy peanut butter, 6 cups Rice Krispies, 1 -
12 oz. bag choc. chips, 1 - 12 oz. bag butterscotch chips.
Combine sugar and Karo syrup in a pan. Bring just to a boil. Stir in peanut butter until
thoroughly blended. Place cereal in large bowl and add mixture. Thoroughly blend. Pour
onto "pammed" sheet cake pan. Spread on both chips.
Melt in warm oven. Spread with rubber scraper. Cool to set. Serves lots! |
Yummy and Easy Cheese Ball
3 pkgs. softened cream cheese, lots of grated cheddar cheese (or colby-jack), chopped
green onions, and 1 pkg. dry ranch dressing mix (sometimes I add 1/2 of another pack)
Blend well. Makes 1 large cheeseball or split and make 2 smaller ones. Put on plate in
frig and let cool. Great with your favorite crackers.

Eric's Fudge!
There is a funny story about how my fudge came to be named after our friend
Eric, but Eric would get mad if I told it on the internet!
1 box 10X sugar - (3 2/3 cups)
½ Cup unsweetened cocoa powder
¼ cup milk
½ cup butter or margarine (1 stick)
1 T vanilla
Lightly butter or grease and 8 inch pan (or tin). Blend sugar &
cocoa and put in large (3 qt) bowl. Add milk, butter and microwave on high from 2-4
minutes, or until butter is melted. Stir once. Add vanilla, mix well to blend. Spread in
pan, cool and cut into squares.
~VARIATIONS~ you can add :1 cup peanut butter w/butter; Nuts; coconut; marshmallows;
chopped maraschino cherries.
~Substitutions~ instead of vanilla - add a liquor (or any flavoring) of your choice:
almond, creme de menthe, Kahlua, coffee, ANYTHING!! |
EASIEST
appetizer in the world!
1 package won ton wrappers
1 8 oz slab of hot pepper cheese, cut into the size of sugar cubes.
Preheat oven to 350F. Drop the cubes into center of the wrapper, twist corners closed
(moisten fingers w/water) and bake on a cookie sheet or in mini muffin pans for about 6-8
minutes. Serve HOT. |
Baked Artichoke Dip
My favorite!
Chop 1 jar/can of artichoke hearts (14 oz). Add fresh minced garlic cloves (1-4, your
choice), set aside.
Combine 1/2 c parmesan cheese, 1 T lemon juice, 1/4 cup mayo (lowfat OK) & 1/4 cup
cream cheese, softened. Mix well and add the artichokes & garlic. Put into a 1 qt.
baking dish, top with 2 T parmesan cheese and 2 T bread crumbs.Bake 2o min @ 375. Serve
with bread, crackers or veggies. |

SHRIMP SPREAD (Always gets
rave reviews and so easy!)
1 8-oz. pkg. Cream Cheese, softened
1/2 Cup Miracle Whip Salad Dressing (I've used mayo, too)
1 4-1/2 oz. can tiny cocktail shrimp, drained, rinsed
1/3 Cup finely chopped onion (I decrease this, since I'm not fond of onions)
1/8 teaspoon garlic salt
Combine cream cheese and salad dressing, mixing until well blended. Stir in remaining
ingredients. Cover; chill. Serve with assorted crackers.
Preparation time: 10 minutes plus chilling.
SWEET
POTATO CASSEROLE (Wonderful with ham and a tradition at our Christmas dinner!)
Two large cans sweet potatoes, drained
1 teasp. salt
1 Cup brown sugar
2 Tablesp. butter
3 Tablesp. flour
1 Cup mini marshmallows
1 Cup Half & Half
1/2 Cup pecans (or walnuts)
Place drained potatoes in a buttered 9 X 13" casserole or pan. Combine salt, sugar,
and flour and pour mixture evenly over potatoes. Dot with butter, add marshmallows and
nuts. Pour half & half over all. Bake at 325 F for 1 hour.

RASPBERRY ALMOND SANDWICH COOKIES
(Another really easy, but delicious recipe!)
1 box Duncan Hines Golden Sugar Cookie Mix
1 egg
1 Tablespoon water
1/2 teaspoon almond extract
3/4 Cup sliced natural almonds, broken
Seedless Red Raspberry Jam (I use Polaner's all-fruit)
1. Preheat oven to 375 F
2. Combine cookie mix, buttery flavor packet from mix, egg, water and almond extract in
large bowl. Stir until thoroughly blended. Drop half of dough by level measuring
teaspoonfuls 2 inches apart onto ungreased cookie sheets. (It is a small amount of dough
but will spread during baking to 1 1/2 to 1 3/4 inches.)
3. Place almonds on waxed paper. Drop other half of dough by level measuring teaspoonfuls
onto nuts. Place almond side up 2 inches apart on cookie sheets.
4. Bake both plain and almond cookies at 375 F for 6 minutes until set but not browned.
Cool l minute on cookie sheets. Remove to cooling racks. Cool completely.
5. Spread bottoms of plain cookies with jam; top with almond cookies, almond side up.
Press together to make sandwiches. Store in airtight container.
Makes 4 1/2 to 5 dozen cookies.

CHRISTMAS BRUNCH CASSEROLE
1 dozen eggs
1/2 Cup milk
8 oz. sour cream
about 2 Cups diced ham (may substitute sausage, cooked and drained, or cooked links cut
into bite-sized pieces, or crumbled bacon)
about 2 cups shredded cheese (cheddar, swiss, jack or combination, depending on your own
preferences.)
Beat together eggs and milk. (Crack eggs into bowl, and discard shells before you start
beating!) Fold in sour cream until well blended. Add your choice of meat or skip it for a
meatless version, and desired amount of cheese. (That's the beauty of this recipe - use
what YOUR family likes. We like lots of cheese!) Pour into buttered 9X13 glass baking pan.
(Aluminum may turn the eggs gray!) Bake at 350 F until set, and just beginning to turn
golden on top. Cut into squares. This will serve up to 12, depending on the size of the
squares you cut. Talk about versatile, you can't ruin it, so use as many eggs and as much
meat and cheese as you need to feed your group. Just keep the milk and sour cream in the
same general proportions to the eggs and use an appropriate size glass casserole. |
FUDGE
(This is so easy and fool-proof IF you follow the directions exactly!)
4 1/2 Cups Pure Cane Sugar (Domino's works best)
1 Can Evaporated Milk
1 Tablespoon Vanilla Extract
2 Sticks Butter
18 oz. Chocolate Chips (or any variety of chips, I like peanut butter and butterscotch, or
you could do chocolate mint. I'm going to try to swirl chocolate and peanut butter this
year.)
Nuts, if desired.
In a very heavy saucepan over med high heat combine sugar and evaporated milk. Cook,
stirring until mix comes to a full rolling boil; then boil EXACTLY 7 minutes, stirring
constantly and being careful not to burn.
Remove from heat. Add vanilla, butter, chips and nuts. Stir until butter and chips are
completely melted. Spread in well buttered 9 X 13" pan. Refrigerate at least 6 hours.
Cut in squares. It's outta this world and makes great gifts!

Corn Scallop from Rena's Kitchen
1 can whole kernel corn, drained
1 can cream style corn
2 eggs, beaten
1 small can evaporated milk
4 Tbs. butter, melted
2 Tbs. instant minced onion
1/2 tsp. salt
1/4 tsp. pepper
2 Cups crushed soda crackers
1 12 oz. pkg. processed swiss cheese diced or shredded
Mix everything together and pour in a well-buttered casserole.
Bake at 325 for 1 hour. |

CHRISTMAS JELLO
1 LARGE PKG. RASPBERRY JELLO
1 CUP BOILING WATER
1 CUP COLD WATER
1 CUP APPLESAUCE
1 CAN CRANBERRY SAUCE
TOPPING:
3 OZ. PKG. CREAM CHEESE
2 TABLESPOONS MAYONNAISE
1 TEASPOON ORANGE JUICE
IN A 9 X 9 SQUARE DISH OR 9 X 13 OBLONG DISH, DISSOLVE JELLO IN BOILING WATER. ADD
COLD WATER. STIR IN APPLESAUCE AND CRANBERRY SAUCE UNTIL EVENLY BLENDED. REFRIGERATE
UNTIL COMPLETELY SET. MIX TOGETHER CREAM CHEESE, MAYONNAISE, AND ORANGE JUICE UNTIL
SMOOTH. CUT INTO SQUARES AND SERVE ON LETTUCE LEAF. GARNISH EACH SQUARE WITH A
DOLLOP OF TOPPING. |
STICKY BUNS FOR CHRISTMAS BREAKFAST
1 LOAF FROZEN BREAD DOUGH, THAWED
1 PKG. INSTANT BUTTERSCOTCH PUDDING MIX
1/2 CUP BROWN SUGAR
1 TSP. CINNAMON
1 STICK BUTTER OR MARGARINE, MELTED
1/2 CUP CHOPPED NUTS, OPTIONAL
THE NIGHT BEFORE:
AS SOON AS DOUGH IS THAWED ENOUGH, CUT INTO 1/4, 1/8, 1/16, AND 1/32s. MIX TOGETHER DRY
INGREDIENTS. DIP BREAD DOUGH PIECES INTO MELTED BUTTER AND THEN DRY MIX. PLACE IN ROWS
IN UNGREASED 8 X 8" PAN. SPRINKLE WITH NUTS IF DESIRED. ANY LEFTOVER
BUTTER AND DRY MIX CAN BE POURED OVER THE TOP. COVER WITH FOIL OR PLASTIC WRAP AND
LET RISE OVERNIGHT. (UNTIL DOUBLED.) BAKE AT 350 FOR 20 TO 25 MINUTES.
IF PREFERRED, RECIPE CAN BE DOUBLED AND
PIECES LAYERED IN A TUBE PAN.
LET RISE AND INCREASE BAKING TIME.20 |

Quick Pizza Dip
1 8 oz. container cream cheese
1 tsp. Italian seasoning
1/2 cup pizza seasoning
1/8 tsp. garlic powder
2 C. shredded mozzarella cheese (divided)
2 tsp. each chopped red and green peppers

1) Beat cream cheese and seasonings w/ electric
mixer on medium until well blended.
2) Spread on bottom of 9" pie plate (glass looks better than metal)
3) Top with 1 cup mozzarella cheese, pizza sauce, remaining mozzarella cheese and peppers.
4) Bake 15-20 minutes or until mixture is thoroughly heated and cheese is melted.
5) Serve with breadsticks. |

WHITE CHOCOLATE PARTY MIX -
EASY! EASY! EASY!
1 pkg (10 oz) mini pretzels
5 cups Cheerios
5 cups Corn Chex
2 cups Salted Peanuts
1 lb. Plain M&M's
2 pkgs (12 oz. each) vanilla chips or almond bark
3 Tbs. Vegtable Oil |
In a large
bowl, combine first five ingredients; set aside. In a microwav-safe bowl, heat chips and
oil on medium-high for 2 minutes, stiring once. Microwave on high for 10 seconds; stir
until smooth. Pour over cereal mixture and mix well. Spread onto three waxed paper-lined
baking sheets. Cool; break apart. Store in an airtight container.
Make about 5 quarts. I used a 700-watt microwave in making this. Enjoy! You can't get
enough. Kind of that salty-sweet thing going. |

A Different Way to Make Fruitcake
1 cup water
>> 1 cup sugar
>> 4 large eggs
>> 2 cups dried fruit
>> 1 teaspoon baking soda
>> 1 teaspoon salt
>> 1 cup brown sugar
>> lemon juice
>> nuts
>> 1 gallon whiskey
Sample the whiskey to check for quality.
Take a large bowl.
Check the whiskey again to be sure that it is of the highest quality.
Pour 1 level cup and drink.
Repeat.
Turn on the electric mixer; beat 1 cup butter in a large fluffy bowl.
Add 1 teaspoon sugar and beat again.
Make sure the whiskey is still okay. Cry another tup. |
Turn off the mixer.
Break two legs and add to the bowl and chuck in the cup of dried fruit.
Mix on the turner.
If the fried druit gets stuck in the beaterers, pry it loose with drewscriver.
Sample the whiskey to check for tonsisticity.
Next, sift 2 cups of salt. Or something. Who cares.
Check the whiskey.
Now sift the lemon juice and strain your nuts.
Add one table. Spoon. Of sugar or something. Whatever you can find.
Grease the oven.
Turn the cake tin to 350 degrees.
Don't forget to burn off the tweater.
Throw the bowl out of the window.
Check the whiskey again.
Go to bed.

Pumpkin Roll
3 Eggs
1 C. sugar
2/3 C. pumpkin 1 tsp. lemon juice
3/4 C. flour 1 tsp. baking
powder
2 tsp. cinnamon 1/2 tsp. nutmeg
1/4 tsp. salt
1 C. chopped nuts (us as topping)
Beat Eggs. Add sugar, stir in pumpkin and lemom juice. Stir in all dry ingredients,
retaining nuts for later use. Grease and flour jelly roll pan...spread mixture in pan.
Place nuts on top. Bake at 350° for 15 minutes. Turn out of warm pan onto a powdered
sugar covered towel. Roll in towel to cool.
Unroll and fill with this blend:
1 cup powdered sugar, 6oz cream cheese, 4 teaspoons oleo,
and 1/2 teaspoon vanilla. |
CHEESE ROLL
1 lb. Processed cheese..I use Velveeta 8 oz. cream cheese
Roll Velveeta between layers of plastic wrap. Spread Velveeta with softened
cream cheese. Chop Finely .. 1/2 cup pecans, 2 canned jalapeno peppers, 3
green onions with tops, and 1 small jar pimentos (drained). Spread on top of
Velveeta and cream cheese. Roll into a log shape. Cut into logs about 6 inches long. Can
be frozen. Serve with crackers. |

Baked Corn Pudding Casserole
1 can whole kernel corn drained (12-15oz.)
1 can creamed corn (12-15oz.)
1 egg, beaten
1 box Jiffy corn muffin mix
1 c sour cream
1 stick butter melted
Mix all ingredients. Pour into greased casserole dish. Bake at 350 degrees for
approximately 45 minutes, or until lightly browned on the top. Can easily be doubled.
Yummy Hershey's
Moist Chocolate Cake
1 3/4 c all purpose flour
2 c sugar
3/4 c cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 c milk
1/2 c oil
2 tsp. vanilla
1 c. boiling water
Combine dry ingredients.
Add remaining incredients EXCEPT boiling water; beat at medium speed 2 minutes.
Remove from mixer; stir in boiling water (batter will be thin).
Pour into 2 greased and floured 9" pans or a 13" x 9" pan.
Bake at 350 degrees for 30-35 minutes for layers, or 35-40 for 13" x 9" pan. |
Carrot Cake
2 c flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp mace
1 1/2 c sugar
1 1/4 c oil
4 eggs
3 c finely shredded carrots
1 tbl grated lemon peel
3/4 c chopped nuts
1/2 c raisins
Sift together flour, baking soda, baking powder, salt, cinnamon and mace; set aside.
Beat together sugar and oil.
Gradually beat in eggs and then flour mixture.
Stir in carrots, lemon peel, nuts and raisins.
Grease and flour a 10" tube pan or three 8" round cake pans.
Pour in batter and tap on counter to release any air bubbles.
Bake at 350 degrees for 50-60 minutes for tube pan, 25-30 minutes for cake pans.
Cream Cheese Frosting
8 oz cream cheese
6 tbl butter softened
1 tsp vanilla extract
2 - 2 1/2 c confectioners sugar
Combine all ingredients together and beat until smooth. |
